Season 2 pounds boneless skinless chicken breasts, all over with salt and pepper. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook the chicken for 3-4 minutes on each side.
Remove the chicken from the skillet and dice once it’s cool enough to handle. The chicken will finish cooking later.
Add the ¼ cup unsalted butter, 8 ounces sliced mushrooms, ½ cup chopped yellow onion, and 1 cup frozen peas to the skillet and cook the vegetables until they are tender, about 4-5 minutes.
Add the 3 cloves minced garlic, and cook for just a minute. Whisk the ¼ cup all-purpose flour into the butter and vegetables to create a paste.
Slowly whisk the 2 cups chicken broth and 1 cup half and half into the butter paste. Stir and cook until the sauce becomes creamy.
Add in the chicken, ¼ cup white wine vinegar, 1 (4-ounce) jar pimentos, and 1 teaspoon chicken bullion. Reduce the heat to medium-low and cook until the chicken is cooked through, stirring occasionally.
Remove the skillet from heat and serve with rice, noodles, or dumplings. Season with salt and pepper to taste!
